Beer was manufactured by making dough of barley, which was first left to ferment, then partly baked in the oven, after which it was soaked in water. The moistened bread would then be kneaded by hand (or foot) through a strainer into a vat with a spout. The mash was finally poured into jars and stored for fermentation. The same mash was still used in Egypt and Sudan in recent times, by humble people as a beverage. This is a "servant statue" from the household of a high official in the Old Kingdom. The servant has a round face and is wearing a short curled wig. He looks straight ahead and is not leaning a little to see what he is doing. His body is strong and his head is attached to his body with just a short space for the neck. The strainer into which he is putting the kneaded dough is carved to show that it was a basket. The big vat in which he collects the mash has a spout at the front and stands in a hole in the small base, which is made to look like basketry, on the stone base of the whole piece.
La bière était fabriquée à partir de pâte d'orge qui devait d'abord fermenter puis cuire partiellement au four ensuite être trempée dans l'eau. Le pain mouillé était ensuite pétri à la main (ou au pied) à travers une passoire dans une cuve à bec. La pâte était finalement versée dans des récipients et entreposée afin de fermenter. Cette même pâte est encore utilisée en Egypte et au Soudan de nos jours, par des modestes gens, en guise de boisson. Cette "statue de servant" provient de la demeure d'un haut fonctionnaire durant l'ancien empire. Le servant, à visage arrondi, porte une perruque courte bouclée. Il regarde droit devant lui et ne se penche même pas pour regarder ce qu'il fait. Son corps est robuste et sa tête est rattachée à son corps grâce à un très petit espace pour le cou. La passoire dans laquelle il met la pâte pétrie est taillée en guise de panier. La grande cuve dans laquelle il rassemble la pâte comporte un bec sur le devant et se trouve dans un trou dans la petite base, censée ressembler à un panier, sur la base en pierre de la pièce entière.
كانت الجعة تصنع من عجين الشعير الذي كان يترك أولا ليخمر، ثم يخبز جزئيا داخل فرن وينقع بعد ذلك في الماء. ويعجن الخبز المنقوع يدويا (أو بالقدمين) من خلال مصفاة بمزراب، ثم يصب الهريس في النهاية في الجرار ويخزن للتخمر. وظل الهريس يستخدم في مصر والسودان حتى عهدنا هذا؛ كشراب بين الطبقات الدنيا. والتمثال المعروض لخادم كان يعمل لدى مسئول كبير من عصر الدولة القديمة. وصور الخادم بوجه مستدير ومرتديا باروكة شعر مستعار قصير مجعد. وهو ينظر أمامه مباشرة ولا يميل قليلا لكي يرى ما يفعل. والخادم صاحب بنيان قوي ورأسه قريبة من بدنه؛ فالعنق قصير. وقعرت المصفاة التي يضع فيها العجين، لتبين بأنها سلة. والإناء الضخم الذي يجمع فيه الهريس به مزراب أمامي ويستقر داخل فتحة في القاعدة الصغيرة التي صنعت في شكل يشبه السلال؛ فوق القاعدة الحجرية للقطعة بأكملها
